Ok, so today I made some amazing muffins! I've had this recipe for a while. I'm not real sure where I got it, but somehow it made it to my regular fall baking rotation! I've been making these for a few years, but this year I've tweaked the recipe a bit so I can justify eating them for breakfast!! HA! Ok, so here's the recipe:
Pumpkin Muffins
1 cup pumpkin
1 1/2 cup sugar
2 eggs
1/4 cup oil
2 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon pumpkin pie spice
2 cups chopped apples (I prefer granny smith)
1 cup chocolate chips (this time I used special dark)
1/4 cup cooked quinoa
1/4 cup cooked oat meal (only because I don't care for raw oats!)
1. Mix pumpkin, sugar, eggs, and oil.
2. Add flour, baking soda, salt, and pumpkin pic spice.
3. Mix until blended.
4. Add quinoa and oat meal and mix.
5. Add apples and chocolate chips.
6. Bake in muffin tin at 350 for 15-20 minutes. Makes 2 dozen.
